Amberjack: Nicknamed "reef donkeys" for their brutal strength and stubborn fights, amberjack are the ultimate test of an angler's endurance. These bruisers hang around deep structure and will do their best to drag you back to their underwater lairs. The bigger ones, which can top 100 pounds, are affectionately called "horse-eye jacks."
